Homestyle Sourdough Pizza

Pizza is magical, let's go ahead and start there. It can be anything you want it to be. As many or as few toppings as you'd like, deep dish, thin crust or even stuffed crust. When it comes to pizza I don't dare question someone on their choices because it is something you can make your own.

The thing that has always made me feel like I couldn't make pizza at home was the crust. And thanks to King Arthur Flour and a little bit of practice, I can now make crust at home!

This recipe will yield 2, 9-10" pizzas

Ingredients

Sauce
1 can whole tomatoes
1 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper
2 tbsp fresh basil
2 cloves garlic crushed
2 tbsp tomato paste

Pour all ingredients into a food processor and pulse to blend all ingredients (if you want small chunks of tomato, make sure to not over blend the sauce. Pour Sauce into a small saucepan and bring to a simmer. After all ingredients are incorporated, cool before pouring over prepared crust.


Crust (King Arthur Flour Recipe)
1 cup (241g) sourdough starter, unfed/discard
1/2 cup (113g) warm water
2 1/2 cups (298g) King Arthur Unbleached All-Purpose Flour
1 teaspoon salt
1/2 teaspoon instant or active dry yeast

Toppings
Your choice, go wild!
(I used burrata, calabrese trumpet mushrooms and basil)

Steps

Combine all ingredients and mix with a spoon or your hands to combine, then knead for about 7 minutes.

Place the dough in a greased/oiled container, cover and let rise until almost doubled in size. Depending on temperature and the activity level of your starter, this will take between 2 and 4 hours. For a faster rise, place the dough in a warm spot, or double the yeast.

For two thin-crust pizzas, divide the dough in half, and shape each into a flattened disk. Drizzle two 12" round pizza pans with olive oil, and brush to coat the bottom. Place the dough in the pans, cover, and let rest for 15 minutes. After this rest, gently press the dough toward the edges of the pans. If it starts to shrink back, cover and let rest for 15 minutes before continuing.

Bake pizzas at 425 degrees for 10 minutes, add cheese and continue to cook for an additional 10 to 15 minutes.

Remove from oven and let cool for 5 minutes before serving!
