Whole Roasted Chicken

Here's another delicious way to prepare a whole bird that will allow you enjoy several meals from a quick and easy recipe. This is an easy way to make meat for sandwiches, tacos or as a stand alone with some sides for the week.

Ingredients

5lb chicken
2 Tbsp Olive oil
2 Tbsp Emeril's essence seasoning
1 lemon, cut in half
4 sprigs rosemary
1 head of garlic, cut in half

Steps

Wash and prepare the chicken by washing and drying off the chicken. Drizzle olive oil over the chicken, then sprinkle both sides of the chicken with Emeril's essence seasoning.
Cut the lemon in half and place inside the chicken .
Cut the head of garlic in half and place inside the chicken.
Place the rosemary in the chicken.
Place chicken on the roasting pan.
Preheat the oven to 425 degrees bake the chicken for 15 minutes, reduce heat to 350 and cook for 1.5 hours (or till internal temperature is 165)

Let sit for 15 minutes before carving, serve and enjoy!
